When kenya turned 4, he got to deliver his birthday books to the hospital himself and really understood how fun and fulfilling it is to give books to those who might not have access to them.
Last year i learned about an incredible nonprofit organization called that teaches young children how great it feels to give back while celebrating the love of a good book.
It promotes both literacy and service learning by providing kids the opportunity to select, purchase and inscribe books that are then donated to their less fortunate peers.
This is my variation on the traditional oatmeal raisin cookie which uses naturally sweet honey instead of sugar and is packed with so many tender sweet raisins i give them top billing and call it a raisin oatmeal cookie.
Preheat oven to 350 f.
Place the butter and honey in a bowl or standing mixer and beat for 1 minute.
Add the eggs and vanilla extract and beat for another minute on medium speed or until smooth.
In a separate bowl, mix to combine the flour, oats, baking soda, salt and cinnamon.
Slowly add the dry ingredients into the wet and mix to incorporate.
Stir in the raisins then drop 1 tbsp of dough for each cookie onto a silpat or parchmentlined baking sheet.
Bake for 1214 minutes.

She calls it the chunky peanut butter and oatmeal chocolate chipster.

And as i looked at my countertop of ingredients, which i had not yet put away, i realized that salt was not among them.

So as i looked at the dozens of freshly baked warm cookies that i was going to surprise my coworkers with, i was disheartened.
Until, that is, i decided to experiment.
I grabbed some fine sea salt and lightly sprinkled a bit over the tops of the cookies.
Because the cookies were still warm, the salt stuck, like little crystals on top of the cookie.

Bake for 13 to 15 minutes, rotating the sheets from top to bottom and front to back after 7 minutes.
Take out the cookies when they are gold and just firm around the edges

It took a little more time than usual for meand a few trips to the liquor storebut i have to admit that the final cookies came out great and tasted just perfectly margaritay.
When i make citrusbased cookies, i usually use a combination of zest, juice, and extract to really punch up the flavor.
But i knew i was going to use a lot of tequila in the wet ingredients and needed the tequila flavor to shine.
Lots of lime zest and just a small amount of lime juice would do the trick, i thought, without adding too much liquid to the recipe.
I decided to move forward with my dough and figure out what to do about the tequila later.
My plan was to salt the dough balls before i baked them, but i forgot that step.
So i smooshed them slightly with my hand to flatten them out a bit.
And then it came to me: top the cooled cookies with a tequilainfused icing and then sprinkle them with salt.
This trick would up the tequila flavor and give me a second chance to top the cookies with salt.
The key to achieving the margarita flavor is the icing and the sprinkle of sea salt.
The icing gives you the sweetness and the raw tequila flavor you expect in a drinkable margarita.
The salt balances the sweetness and ties the lime and tequila together perfectly.
Put some plastic wrap or wax paper under the cooling racks before you ice the cookies.
This will make cleanup a lot easier.
Makes 2 dozen cookies.
Shape dough into ballsabout 2 tablespoons each.

I usually mix my lye and goat milk outside to reduce the chance of breathing in the fumes.
Once the lye has dissolved set the mixture aside in a safe place with a thermometer in it to measure the temperature.
While the lye is cooling, you can now begin to heat the oils.
You will heat the oil with to exactly 92 degrees fahrenheit.
Keep an eye on the lye mixture.
You need to keep the oil at approximately 92 degrees fahrenheit until the lye mixture cools to about 92 degrees fahrenheit.
Once the lye mixture is at 92 degrees and the oil mixture is at 92 degrees you can combine the two mixtures.
You must now stir the mixtures together until trace.
If you hand stir the mixture will take about 30 to 50 minutes to trace.
If you use a it will take less than 15 minutes to.
Once the mixture has reached trace, add the oatmeal, honey and any fragrance oils.
Stir for a few more minutes to even out the added ingredients, then pour into soap molds.
Leave the soap in a covered mold for about 48 hours before removing and cutting.

Preheat oven to 350 degrees.
In a large mixing bowl beat butter with an electric mixer on medium for about 30 seconds.
Add brown sugar, raw sugar, baking soda, and salt.
Beat until combined, scraping the sides of the bowl continuously because the batter will be thick.
Beat in egg and vanilla until combined.
Add in rolled oats, flax seed meal, chocolate, cherries, and pumpkin seeds.
Allow the extremely thick batter to combine.
Bake for 9 to 11 minutes or until tops are lightly browned.
Let cookies cool on cookie sheet for 1 minute.
Transfer cookies to wire rack to cool.
Makes about 30 cookies.
